Getting her start waiting tables in the Big Apple at just 15 years old, it wouldn’t be until the age of 25, when Rayme Rossello would be enchanted about restaurant life. Around this time, Rayme was attending the University of Colorado and went home to NY to visit friends. They decided to go to a restaurant called Gramercy Tavern, where they experienced a 9-course meal and exceptional service over the period of hours. And this is when Rayme’s revelation occurred – she decided to shift her dreams of becoming an actress to being in the restaurant industry.

Back in Colorado, she would learn the ropes at a restaurant named Q. From a busser, to a back waiter then a waiter, in addition to becoming a general manager at Jax, and co-founding a restaurant chain called Proto’s Pizza, Rayme worked her way up and added to her career aspirations with a degree in pastry arts from the Culinary School of the Rockies.

By 2010, Rayme was ready to be a 100% owner and launched Comida Food Truck. Not only was it one of the first food trucks in the Denver, but it offered what was missing in the area, a non-traditional Mexican food option that offered a menu that blended the taste of Mexican street food with a southern twist.

As of today, Rayme has been awarded a spot on Smithsonian Magazine’s Top 20 List of the Best Food Trucks in the U.S. (2012); and has grown from one food truck, to two sit-down restaurants in Colorado.

Interesting fact: the pink color behind Comida came from Rayme’s personal thoughts about what represents Mexico’s culture and feel – the bougainvillea plant that can be found all over Mexico.
