Growing up in a Korean-American household in St. Louis, David Choi picked up cooking skills from his parents and grandparents. But in order to keep learning, he worked odd restaurant jobs, and made an effort to play around with different recipes. This would lead him to enter a personally unfamiliar territory – entering the food truck business to sell Korean-Mexican fusion dishes under the name of Seoul Taco.

With lines of 40+ people during Food Truck Fridays, this immediate success validated his decision to open a brick-and-mortar in 2011. Five years later, he has a total of four restaurants across, St. Louis, Illinois and Missouri.

From being a pioneer in the St. Louis food truck scene, to running a successful $4.5 million fast-food chain, David Choi is a person to watch!

Interesting fact: David sold his car and cashed out his bank account in order to buy his first food truck for $18,000.
